At 540 E. Monroe St, a 100-year-old building has found new life as Warbler Coffee Co., a specialty café that brings history and creativity together. Formerly known as Layton’s Grocer & Arms and nestled between Brownsville Police Department and the Old City Cemetery, the shop now serves innovative coffee and tea offerings in a thoughtfully restored setting.

A Historic Space with a Modern Vision

Warbler Coffee Co. was founded by Omar Garza, whose passion for sustainability and community drives every aspect of the business. Renovating the century-old building was a significant challenge but also an opportunity to honor Brownsville’s history while creating something entirely new.

The eBridge Fund provided the financial support needed to move forward with the project, covering key costs in the buildout phase. The result is a café that retains the charm of its historic roots while providing a welcoming, modern environment.

“The funding was pivotal in bringing our café to life,” Garza shared. “It allowed us to transform a historic building into a space where people can connect and enjoy something special.”

Coffee and Community

Every detail is intentional at Warbler. The menu combines classic espresso-based drinks with creative options that reflect the café’s focus on storytelling and quality. Drinks like the "Early Bird" (cold brew with orange juice and agave) and the "Bee’s Knees" (cold brew with lemonade and local honey) showcase Warbler’s inventive approach. Teas such as the "Malabar Tea," featuring bold notes of ginger, turmeric, and lemongrass, offer something distinct for tea lovers.

Local partnerships are also central to Warbler’s mission. The café works with area artisans to feature baked goods like VegAngela’s treats and Stephanie’s Cheesecakes, creating opportunities for collaboration and community support.

Lessons for Entrepreneurs

Reflecting on the journey, Garza emphasizes the importance of preparation when taking on a loan. “Before committing, it’s critical to have a proof of concept,” he advises. “Start small, build your brand, and focus on your clientele. Those efforts pay off when you’re ready to expand.”

For Warbler, these steps made it possible to create a space that combines RGV values with global inspiration.

Warbler has quickly become a favorite in Brownsville, offering customers a chance to sip something new while staying rooted in the community. As each carefully crafted cup goes out across the counter, it carries with it a taste of what a sustainable local business can achieve in Brownsville.
